I think when you are dealing with a dish from another century its more than acceptable to riff. Is this a Waldorf salad? Im not sure but I was thinking of one when I made it and that feels close enough.

You won’t catch me putting mayonnaise on a salad any time soon but I wasn’t ready to give up the creaminess it provides. Where does my Polish heart lead me but to sour cream. Try this one out, its the perfect antidote to a graaaaaay January day.

dressing

1/4 cup sherry vinegar
1/2 lemon

1/4 cup sour cream

3/4 cup olive oil

1 grated clove of garlic

1.5 tsp of salt or more to taste

1 tsp honey

lots of grinds of pepper

whisk it all together

Salad

1 head radicchio

5 large lacinato kale leaves

1/2 bunch parsley

1/2 bunch dill

1 cup sliced grapes

1/4 of a pomegranate

a small wedge of stilton or gorgonzola

pickled red onions

1/2 cup of chopped roasted pistachios

Reserve 4-6 radicchio leaves, the larger ones. Chop everything and mix it together with the dressing. Gently pile the salad into the radicchio leaves and garnish with more of the nuts, fruits and cheese. Eat like salad tacos<3
